"Exploring Aubrac: Pastoral Landscapes, Cows, and Aligot"

The Aubrac region is a high volcanic-granite plateau rising over 1000 meters above sea level, located in the southern-central part of France in Occitania. It is a place of extraordinary charm, rich history, and exceptional culinary-travel culture. This area is surrounded by mountain ranges and picturesque meadows, through which flow pristine streams, evoking the image of Scottish pastures, but in the heart of France.

The pastoral shelters of Aubrac, also known as "burons," are traditional huts. They were used by shepherds to store food, tools, and as shelter from harsh weather conditions. These characteristic buildings are typically made of stone and wood, blending perfectly with the mountainous landscape of the region. Today, many of these traditional shelters have been restored and transformed into accommodation for tourists, allowing them to experience the authentic atmosphere and pastoral culture of Aubrac. They also serve as restaurants offering the local dish Aligot, which will be discussed further in the article.

The solitary burons make an incredible impression against the backdrop of endless meadows and rocks.

In the pastures of Aubrac, besides cows, you can also encounter horses. We managed to capture an Ardennes horse during a drone flight.

The region is a paradise for nature lovers, with lakes and mountain landscapes that take your breath away, offering beautiful hiking trails as well as options for cycling enthusiasts. Electric bikes can also be rented in Laguiole, a charming town famous for its knives. Unfortunately, the prices of these artisanal products were beyond our reach, but you can instead visit the dedicated museum.

The museum is open from Tuesday to Saturday, from 9:00 AM to 12:00 PM and from 2:00 PM to 6:00 PM.

The ticket price is 3.50 euros.

Parking is located in the city center right next to the Bull monument. Before visiting the center, it's best to take your first steps towards the Church of St. Matthew, from which you can enjoy a magnificent view of the city, with its typical gray slate roofs in the foreground and mountains all around.

Aubrac is a breed of beef cattle originating from the French region of Lévézou. It is characterized by its impressive appearance and gentle disposition. Aubrac meat is highly valued for its excellent quality and unique flavor. This breed plays a significant role in the culinary traditions of the region and is a symbol of its heritage and tradition. The challenging climatic and geographical conditions of the mountainous area of the southern Massif Central have shaped the breed. Cows have adapted thanks to their exceptional resistance to frost and temperature fluctuations.

Déroc waterfall

Near the town of Nasbinals, you simply can't miss the Déroc waterfall. It's easily accessible with signposts guiding the way, and there's ample free parking right by the road opposite the souvenir shop. You'll reach it via a gravel road, and as you approach the cliff edge (be mindful, as there are no barriers, so watch out for children), you'll be greeted by the impressive 30-meter-high waterfall! You can access it via two paths on either side, but the real thrill is descending to the cave below (take the path on the right). It's perfect for cooling off in the summer, and you might even spot some daring souls taking icy dips – though we settled for just dipping our toes in.

The view from the top is absolutely breathtaking.

It's best admired from the level of the cave adorned with basaltic columns, enhancing its natural beauty.

From the same parking lot, you can also reach Lac des Salhiens. Unfortunately, we ran out of time to visit it. Both the waterfall and the lake are located along the Route des Lacs(the Lakes Road). I've attached a map with attractions along the route for your reference.

Souveyrols lake

We started our day with breakfast and a stroll around Bonnecombe Pond, a delightful spot to relax amidst nature. There are bridges and picnic areas where you can unwind and enjoy the tranquility.

Aligot is a classic French dish originating from the Aubrac region. It's a delicious, creamy mashed potato dish made with Tome Fraiche, a light cow's milk cheese, and crème fraîche, creating a mouthwatering texture and a unique flavor. Making aligot is not just a culinary experience but also a journey through the traditional flavors of French cuisine. You can find the recipe in the "Food & Recipes.

Aubrac Tea: In reality, Aubrac tea comes from a plant native to the area, Calamintha grandiflora. Known for centuries for its digestive and diuretic properties, it has a lightly minty-cinnamony scent. Available for purchase in Nasbinals.

Laguiole Knives: Featuring the iconic bee emblem, prices start from 85 euros and up.

Cheeses: Laguiole AOP, La Tome fraîche de l’Aubrac, L’Écir de l’Aubrac.
